Makes about 10 buns.
Ingredients:
Dough:
1/4 cup warm water
1/2 tablespoon yeast
1 cups milk
1/2 cup butter
2 eggs
1 1/2 teaspoons salt
1/2 cup sugar
2 teaspoons cardamom
4.5-5 cups flour
1 egg for egg wash
Filling:
1/4 cup softened butter
1/4 cup caster sugar
1/2 teaspoon cardamom
1 teaspoon cinnamon
Topping:
Melted butter
Caster sugar
Method:
Add butter and milk to a microwave safe bowl and warm until the butter is soft and the mixture is warm. Add warm water and yeast to the bowl of a mixer. Add sugar, eggs, salt and cardamom. Make sure the milk mixture is room temperature, then add that as well. Add 4 cups of flour and combine with the dough hook. Once it is all combined, knead for 1 more minute. Check the stickiness of the dough. If the dough sticks to your finger, it needs more flour. Add 1/4 cup and mix again. Continue until the dough is tacky. Now knead for 5 minutes on a medium low speed.
Cover the dough and let it rise until about twice the original volume.
Flour a flat surface and dump the dough out onto it. Roll the dough into a rectangle about 12 inches by 20 inches. Spread the dough with the filling, then fold the other half over the top, making the rectangle 20x6 now. Use a pizza cutter to cut the dough into 1 inch strips.
Line baking sheets with parchment. Take each strip and twist. The roll it in a circle starting at the center. Tuck the end under the bottom. Cover and let the dough rise to double.
Heat an oven to 350 degrees. Brush the tops of each loaf with egg wash. Bake for 15-20 minutes, or until they are a golden color. When they are cool, dip the top half in butter and then into the sugar. I love them heated in the microwave for about 15 seconds!
