Ingredients:
1 sirloin steak
1 pint of cherry tomatoes
1 small red onion or shallot
1 glove of garlic
Grill seasoning or salt and pepper
Oil for cooking
1 tablespoon of goat cheese
Brown rice for serving, I used Trader Joe's frozen rice
Method:
Heat a cast iron skilled over medium high heat. Season a steak with grill seasoning or salt and pepper. Add oil to the hot pan and let it heat up. Add the steak and let it cook until nice and crispy on one side, about 5 minutes. Flip the steak and cook to your liking! I like mine cooked to medium. Remove the stead from the pan and let it rest on a plate. Add a thin slice of butter to the top of the steak to melt while it rests. Heat a pan to medium low heat. Slice the onion thin and cut the tomatoes in half. Add a bit of oil to the pan and add the veggies. Season with salt and pepper. Cook the veggies until they are tender, stirring frequently. Try not to let them brown too much. In the last minute of cooking add the sliced garlic clove and 1 tablespoon of butter. I used microwavable brown rice from Trader Joe's for this, but you could cook your own. Add rice to a plate and top with steak, veggies and goat cheese. The goat cheese warms up and gets beautifully creamy.
