Ingredients:
1 whole garlic bulb
2 teaspoons fresh thyme
8 ounces ricotta
1/2 cup grapes
2 tablespoons pine nuts
1 shallot
mozzarella cheese
fresh basil
goat cheese
honey for drizzling
olive olive oil and salt and pepper for seasoning
Method:
Roast the garlic. Heat the oven to 400 degrees. Take the garlic and chop the top 1/2 inch off. Place on a piece of foil and drizzle with 2 tablespoons of olive oil. Wrap up and place in the oven for 30 minutes. Set aside to cool. Once it is cool enough to touch squeeze the roasted cloves out of the bulb. They should be soft and tender! Combine the ricotta, thyme, 1 tablespoon of olive oil, salt and pepper and roasted garlic. Crisp some shallots by slicing them thin and frying them in olive oil over medium low heat until brown and crisp. Assemble the pizza!
Roll out the dough. Spread with a thick layer of the ricotta mixture. Top with grated mozzarella cheese, pine nuts, shallots, sliced grapes, goat cheese and some fresh basil. Bake in a 425 degree oven for 12 or so minutes, until the sides are brown and the dough is cooked through. Drizzle with honey as it comes out of the oven!
