Minestrone Soup

Ingredients:
1 pound ground beef
1 shallot
1 large carrot
1 celery stalk
2 teaspoons Italian seasoning
1 tsp garlic powder
1 15oz can cannellini beans
1 15oz can tomato sauce
1 cup frozen chopped kale
1/2 pound ditalini pasta
1 quart chicken broth
Salt and pepper to taste
Method:
Dice the shallot, carrot, and celery stock. Add them to a pot with 2 tablespoons of olive oil. Season with salt and pepper and let them cook until tender, about five minutes. Add the ground beef, salt and pepper and cook until browned and cooked through.
While the meat is cooking, boil the pasta in a separate pot of water. Once the pasta is tender, strained and set aside.
Once the meat is cooked through, add the Italian seasoning, garlic powder and tomato sauce. Cook for a minute or two. Add the chicken broth and bring the pot to a simmer. Add the chopped kale and heat through. Add the beans and cooked pasta and heat everything together for 5 minutes. Serve with Parmesan cheese and fresh bread!
