Chicken, Orzo and Spinach Soup

Ingredients:
3 diced medium carrots
1/2 a red onion, diced
4 diced chicken breasts
2 teaspoons dried thyme
1 teaspoon dried oregano
1 teaspoon garlic powder
6 tablespoons butter
6 tablespoons flour
1 quart chicken broth
4 cups milk
2 cups of uncooked orzo pasta
2 cups chopped spinach
Olive oil
Salt and pepper
Method:
Add a few tablespoons of olive oil to a large pot over medium heat. Add the diced carrots and onion and season with salt and pepper. Cook until nearly tender. Add the diced chicken, season with salt and pepper and cook through. Add the thyme, oregano, garlic powder and butter. Let the butter melt then add the flour. Stir until everything is combined then cook for just a minute. Add the chicken broth while stirring. Add the milk and bring it to a boil. Turn down to a simmer while the orzo cooks.
Cook the orzo in a separate pot of boiling water. Once tender add the orzo to the soup along with the spinach. Check for seasoning. Serve with crusty sourdough!
