Lemon Orzo and Chicken Bowl


Serves 5.


Ingredients:


3 chicken breasts

1 small English cucumber or 3 small cucumbers

2 cups arugula

8 ounces uncooked orzo

4 ounces goat or feta cheese

Olive oil, salt and pepper


Dressing:

1 tablespoon honey

1/4 cup olive oil

Juice of 1 lemon

1 tablespoon grainy mustard

Salt and pepper to taste


Method:


Slice the chicken breasts into 1 inch strips. Toss with olive oil and salt and pepper. Cook in a pan over medium high heat until dark golden on one side. Flip and cook on the other side until cooked through. Let rest while you make the dressing.

Cook the orzo according to the package instructions while the chicken is cooking. Drain but don’t rinse.

Mix together the dressing. Add the orzo while warm so it absorbs some of the flavor.

Slice the cucumbers and chicken into bite size pieces and add them to the pasta. Add the arugula and goat cheese and mix.
