Makes one 9x13 pan.
Ingredients:
1 1/4 cup cornmeal
3/4 cup flour
1 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 cup sugar
1 1/4 cup buttermilk (or 1 cup milk, 1/4 cup cream and 1 tablespoon vinegar)
2 eggs
6 tablespoons melted butter
1 15oz can of corn
2 tablespoons melted butter for the pan
3 tablespoons of honey butter (1/2 honey 1/2 butter) for spreading over the top after it is cooked
Method:
Heat the oven to 375 degrees with a 9x13 pan inside. Whisk together the dry ingredients in a large bowl. Whisk together the wet ingredients in a separate bowl. Add the mixtures together and whisk until smooth. Add the corn and mix again.
When the oven has come to temperature add 2 tablespoons of butter to the pan. Once it has melted remove the pan and swirl the butter around to coat the bottom and sides evenly. Add the batter and bake for about 20 minutes, until the edge have begun to brown and the center is cooked through.
As soon as it is out of the oven spread the top with honey butter. Enjoy!
