Lavender Tea Cake


Ingredients for the cake:


1/4 cup honey

1 cup buttermilk

1 tablespoon lavender

3/4 cup softened butter

1 teaspoon baking powder

3/4 cup sugar

2 eggs

1/2 teaspoon salt

2 cups flour





Ingredients for glaze:


2 tablespoons honey

2 tablespoons cream or milk

1 cup powdered sugar

small pinch of salt


Heat the oven to 350 degrees. Warm the buttermilk in a sauce pan with lavender just until simmering. Allow to cool. Cream honey, sugar and butter in the bowl of a mixer with the paddle attachment. Add eggs and mix. Add baking powder and salt and mix. Alternate adding buttermilk and flour, about 1/2 a cup at a time until just barely incorporated. Add batter to well greased baking tins, lining the bottom with parchment paper. You can use a regular loaf pan or 3 mini pans. Bake until the sides just pull away from the sides and a toothpick comes out mostly clean, 30-40 minutes for the mini pans, 40-50 minutes for a large loaf pan. Allow cakes to cook fully and then top with the glaze. Delicious served slightly warmed.
