Ingredients:
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup melted butter
3 eggs
1 cup whole milk
3 cups oats
Topping: 2 tablespoons brown sugar and a big sprinkle of cinnamon
Method:
Butter an 8x8 or equivalent baking dish. Heat the oven to 350 degrees. Combine everything except the topping in a large bowl. Pour the mixture into the buttered baking dish. Sprinkle the top with the brown sugar and cinnamon. Bake for 30 minutes until it is no longer jiggly and the top has browned slightly. Serve in a bowl with maple syrup, milk and fruit.
These can be made overnight : mix everything together and put it in the buttered baking dish. Then cover it and put it in the fridge. The next morning, uncover the dish and place it in the oven. Heat the oven with the dish inside, setting a 40 minute timer. Enjoy warm with milk poured over the top and fresh fruit.
