Sourdough Belgian Waffles

Makes about 10 waffles.


Ingredients:


1 cup whole milk

3 eggs, divided into whites and yolks

1 cup sourdough starter (active or discard)

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp vanilla

1 tablespoon sugar

1 1/2 cups flour

4 tablespoons melted butter


Method:


Separate the eggs. Whisk the egg whites with an electric mixer until you have still peaks. Set aside. Combine the flour, salt, sugar, baking soda and baking powder in a bowl. Whisk. Add the egg yolks, vanilla, milk and sourdough to a measuring pitcher and whisk. Add to the flour and mix until just combined. Add the melted butter and whisk. Gently fold in the egg whites until mostly smooth. Cook in a heated waffle iron brushed with butter.
