Bacon and Grape Pizza


My favorite pizza! It is super flavorful and covers all the important flavor and texture components for me. It has something salty, something sweet, something crispy, something creamy. Heaven!


Ingredients:


ricotta cheese

mozzarella cheese

sliced red onions

purple grapes

pine nuts

red wine vinegar

rosemary

olive oil

salt and pepper

thick cut bacon

goat cheese

honey


Method:


Heat the oven to 425 degrees. Slice the red onion thin and toss together with sliced grapes, pine nuts and salt and pepper. Remove the leaves from a stalk of rosemary and chop them. Add them to the onion mixture. Add 2 tablespoons of red wine vinegar and a drizzle of olive oil and toss together. Roll out the dough. Spread on a layer of ricotta cheese. Top with mozzarella cheese and goat cheese. Top with a few scoops of the onion, grape and pine nut mixture. Top with some sliced cooked bacon. Cook for about 12 minutes, until the crust s brown and cooked though. As it comes out of the oven top with arugula, a drizzle of honey, olive oil and a sprinkle of flaky salt.
