Lemon Sheet Cake

Ingredients:
1 cup melted butter
2 cups caster sugar
2 eggs
Zest and juice of 1 lemon
1/2 cup whole milk
3/4 cup water
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
Frosting:
Zest and juice of 1 lemon
3 tablespoons cream
3 cups powdered sugar
Method:
Heat the oven to 350 degrees. Butter a 1/2 sheet pan and set aside.
Melt the butter in a large bowl. Add the sugar and whisk. Add the eggs and lemon zest and whisk again.
Add the juice of the lemon, milk and water to a pitcher and whisk. Add to the batter and whisk.
Add the flour, salt and baking soda and whisk until just combined. Pour into the pan a nd spread evenly. Bake for 20 minutes.
While the cake is baking mix the frosting by combining all ingredients. The texture should be thick but a little pourable.
Frost the cake as soon as the cake comes out of the oven.
