Chocolate Cardamom Cookies


Ingredients:


1/2 cup softened butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1 1/2 tsp ground cardamom

1/3 cup cocoa powder

1 1/4 cup flour


Method:


Whisk together the sugars and butter until smooth. Add the egg and vanilla and whisk again. Add the baking soda, baking powder, salt, cardamom cocoa powder, and flour and mix until everything just comes together. Use a 1 tablespoon scoop and form into balls. Roll each ball in granulated sugar and then place on a parchment lined baking sheet. Press down on the balls to flatten them slightly. Bake at 350° for 8 to 9 minutes. Drop the pan from a few inches up onto a dish towel laid on your counter to flatten the cookies. Sprinkle the tops with flaky sea salt.
