Banana Cake with Penuche Frosting

Ingredients:
1 large mashed banana
1/2 cup softened butter
1 cup brown sugar
1 teaspoon vanilla
1 egg
1 1/3 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup milk + juice of 1/2 a lemon
Frosting:
4 tablespoons butter
1/2 cup brown sugar
2 cups powdered sugar
1-2 tablespoon milk
Method:
Heat the oven to 350 degrees. Mash together the banana and butter. Add the brown sugar and whisk until smooth. Add the egg and vanilla and mix again. Add the salt and baking soda and mix until smooth. Add the flour and milk/lemon mixture and mix until just combined. Pour into a buttered quarter sheet pan and bake for 20 minutes.
While the cake is baking make the frosting. Add butter and brown sugar to a pot and let the mixture melt together. Bring it to a simmer and let it cook for 1 minute. Remove from the heat and add the powdered sugar and milk and whisk until smooth. It should be fairly pourable.
Pour onto the cake as it comes out of the oven! Cool and serve.
*you can sub the lemon juice for 2 teaspoons of white vinegar.
