Ingredients:
5 medium sized Yukon gold potatoes
3/4 cup heavy cream
4 tablespoons butter
1 teaspoons garlic salt
1/2 teaspoon pepper
1 teaspoon thyme
1 cup grated Parmesan cheese
Method:
Heat the oven to 400°F.
Slice the potatoes as thin as you can, I use a mandolin.
Coat an 8x8 inch baking dish or pie pan with a thin layer of butter.
Microwave the cream and butter together until the butter is melted, about 1 1/2 minutes. Add the garlic salt, thyme and mix.
Drizzle a couple tablespoons of the cream mixture into the bottom of the baking dish. Add a layer of the thinly sliced potatoes.
Drizzle over about 1/4 of the cream mixture and sprinkle over 1/4 cup Parmesan cheese.
Repeat the layers until you’ve used up the potatoes and cream, ending with Parmesan cheese.
Bake for 35-45 minutes, until the top is golden and the potatoes are tender.
