Apple Cake With Custard


Ingredients:


3 apples, peeled and thinly sliced and then cut in half

2 1/2 cups flour

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup brown sugar

8 tablespoons cooled melted butter, plus 1 for brushing after baking

5 eggs

1 teaspoon vanilla

Cinnamon sugar for sprinkling after baking


Method:


Combine dry ingredients in a bowl and whisk. Add brown sugar and mix again. Add eggs, vanilla and melted butter and mix until just barely combined. Add apple slices and combine. Batter will be thick! Add the batter to a spring form pan that has been well buttered. I like to butter my pan, lay a circle of parchment in the bottom and butter that as well. Bake in a 350 degree oven for 40-50 minutes, until a toothpick comes out mostly clean. When the cakes is done remove the outside of the pan. Place a cutting board over the top of the cake and flip it over so you can remove the bottom of the pan and parchment paper. Flip the cake back over onto a cooling rack. Brush the top with the remaining butter and sprinkle generously with cinnamon sugar. Serve with some vanilla custard or vanilla ice cream! (Recipe for the custard is below!)



Vanilla Custard

Ingredients:


1 cup cream

3 cups whole milk

4 egg yolks

3 tablespoons corn starch

1/4 cup sugar

1 teaspoon vanilla

Method:


Bring the milk and cream to a simmer in a heavy bottom pot. While the milk is heating, whisk together the egg yolks, corn starch and sugar. When the milk is heated slowly whisk in 1/3 cup of the hot milk into the egg yolk mixture. Add 1/3 cup more to the mixture and then transfer everything back to the pot. Simmer over medium low heat, whisking continuously, until the custard is thick enough to coat the back of a wooden spoon. Test this by holding up the spoon and swiping your finder down the back. If the line remains, it is done! Remove from the heat and add the vanilla. Serve over cakes or fruit!
