Ingredients:
2 cups whole milk 1 tablespoon vinegar or lemon juice
1 teaspoon baking powder 1 teaspoon baking soda 3/4 teaspoon salt 2 cups flour 2 eggs, separated 3 tablespoons sugar 1/4 cup melted butter Butter for greasing the pan
Separate eggs and whisk egg whites on high until you have stiff peaks. Add milk, vinegar or lemon juice, baking powder, baking soda, salt, flour, egg yolks, sugar and melted butter to a large bowl and whisk. Add in 1/4 of the egg whites and fold in with a spatula. Add the rest of the egg whites and carefully fold until mostly incorporated, without deflating them. Heat aebleskiver pan to medium heat and coat each well with butter. I use a pastry brush to do this. Use a small cookie scoop to fill each well 1/2 way full with batter. Allow to cook for about 2 minutes on the first side and then flip using two skewers to cook for one minute on the other side. Repeat until you've used all the batter. Sprinkle with powdered sugar. We dip ours in a mixture of half cream and half homemade jam. Also delicious dipped in maple syrup! This recipe makes about 40 aebleskivers.
