Pita Bread

Makes 16 pitas.
Ingredients:
2 cups warm water
1 1/2 T yeast
1/2 T salt
1 T sugar
3 T olive oil
4 1/2-5 cups flour
Method:
Add all ingredients to the mixing bowl and knead for about 5 minutes using a dough hook. Start with 4 1/2 cups of flour and if it still seems sticky add a tablespoon more at a time. Cover the dough in a bowl and let it rise until doubled, about 90 minutes.
Split the dough into 16 equal portions. Roll into balls and cover. Let rise about 30 minutes.
Heat the oven to 425 degrees. Roll each ball into a flat disc, about 1/4-1/8 inch thick.
Bake for about 8 minutes until they’re nice and puffy and golden brown.
*I like to bake mine on a baking steel but a pizza stone or baking sheet will also work! I line mine with a sprinkle of cornmeal or parchment paper.
