Peach Panzanella Salad

This recipe makes a side salad to serve 8-10 people.


Ingredients:

Salad:

1/2 a thinly sliced red onion

1/2 a sliced English cucumber

3 sliced peaches

1/2 cup sliced cherry tomatoes

3 cups baby butter lettuce or arugula

Toasted day old sourdough bread (4 cubed slices tossed with olive oil and cooked at 350 for 15 minutes)

1 cup sliced fresh mozzarella

3/4 cup bacon


Dressing:

1/3 cup white balsamic vinegar

1 tablespoon grainy mustard

1 tablespoon of honey

a big pinch of salt and pepper

1/3 cup olive oil


Whisk together the vinegar, mustard, honey, salt and pepper. While whisking, add the olive oil to emulsify the dressing.


*I always add my onions to the dressing first so they can soften before adding the other ingredients.


*I cook my bacon in the oven at 350 degrees for 15-20 minutes
