Makes 14 sandwich cookies.

Ingredients:

1/2 cup softened butter

1/4 cup granulated sugar

1/2 tsp vanilla paste

1/4 tsp salt

1 tablespoon cornstarch

1 cup flour

1 can premade dulce de leche

Powdered sugar for dusting

1/4 cup unsweetened coconut for rolling

Method:

Whisk together butter and sugar until light and fluffy, about 1 minute with a hand mixer. Add the remaining dough ingredients and whisk until combined. It will look like wet sand, but if you press it between your fingers it will hold together.

Dump the mixture onto a piece of plastic wrap. Roll tightly into a log shape and refrigerate for at least 1 hour.

Heat the oven to 350°F. Remove the dough from the plastic and slice into thin slices. I get about 28 slices from one batch. Place in a parchment lined baking sheet and bake for 8 minutes. They should not brown! Just barely set.

Cool fully and then fill each pair with about 1 tsp of dulce de leche. Roll the edges in the coconut and then dust with powdered sugar.
