Orange Crêpes

Ingredients:


Batter:

6 eggs

1 cup flour

1/2 tsp salt

2 cups whole milk


Orange sauce:

1 cup orange juice (fresh squeezed is the best!)

4 tablespoons butter

2 tablespoons sugar


Method:


Mix the batter by whisking the eggs and flour until smooth. Add the salt and milk and whisk until smooth. Set aside while you start the sauce.

Add all the ingredients to a pot and bring to a boil. Reduce to a simmer and let it thicken a little while you cook the crêpes.



Heat a skillet over medium heat. Add a bit of butter to the pan to melt. Add enough batter to coat the bottom of the pan. I use about 1/3 cup depending on the size of the pan. Swirl the pan as you pour in the batter to coat the whole bottom.

Cook for just a minute or two on one side. It should look set and start to bubble a little. Flip and cook another 10 seconds.

Fold the crêpe in half and then in half again so it becomes a triangle. Place the crêpe in the pot with the sauce, spoon more sauce over the top and then serve.
